Try transaction AUT10. This is an audit transaction that will pick up all material master changes.
Very flexible in allowing variants and layouts to be defined. Hopefully your custom field pulls through to this screen.

If the custom field was appended to the standard material-master-related table, then I am pretty sure any change in this particular field will be kept in the standard change table CDHDR / CDPOS. Can you check if this is the case in your current system?
